Our mission is to bring the influence of middle eastern food back to mexican cuisine by mashing authentic techniques of the two cultures. In the 1930's, Lebanese immigrants in Puebla introduced the technique of cooking meat on a vertical rotisserie (Shawarma). This method of cooking the meat gave birth to Tacos Arabes, which would eventually evolve into the Tacos al Pastor we all love today. The friendships of these immigrants and locals helps tell the story of the food and our goal is to leave our own little mark on that story.
